Who doesn’t like Oreos? This is an extremely easy but effective way to transform your favourite cookies into an attractive dessert. And the best part is that this cheesecake requires no baking.
Ingredients:
- 4 ounces Whipping Cream
- 8 ounces Philadelphia Cream Cheese brick (not tub)
- 1/2 cup Caster Sugar
- 1/2 tbsp Lemon Juice
- 2 tsp Vanilla Extract
- 2-3 packets of Oreos
Tools/Equipment:
- Electric hand or stand mixer
- Spatula
- Cupcake tray
- Cupcake liners
Method:
Place an oreo in each cupcake liner as the cheesecake “crust”.
Place about 15 whole oreos in a zip lock bag and use a rolling pin to crush them into little chunks.
In a bowl, using an electric mixer whip the chilled cream until soft peaks form. Then return it to the refrigerator for later use.
In another bowl using the same mixer beat the cream cheese until smooth.
Add the vanilla and lemon. Beat till mixed in well.
Next add the sugar and beat to incorporate.
Then throw in the Oreo chunks and use a spatula or spoon to gently mix them in.
Fill each cupcake liner with the cheesecake mix and chill for 4 hours minimum or overnight.
Whip up some more cream and pipe swirls (no pressure, do whatever you want) and sprinkle over some crushed Oreo.
